Balsamic Glazed Caprese Chicken
INGREDIENTS
- 4 boneless, skinless chicken breasts 
- Salt and pepper, to taste 
- 1 tablespoon olive oil 
- 1 cup cherry tomatoes, halved 
- 1 ball fresh mozzarella cheese, sliced 
- Fresh basil leaves, for garnish - Balsamic Glaze: 
- 1/2 cup balsamic vinegar 
- 2 tablespoons honey or brown sugar 
- 1 teaspoon soy sauce (optional, for depth of flavor) 
PREPARATION
- Prepare the Balsamic Glaze: - In a small saucepan, combine balsamic vinegar, honey (or brown sugar), and soy sauce. Bring the mixture to a gentle boil over medium heat. 
- Reduce the heat to low and simmer the mixture for about 10-15 minutes, or until it has thickened and can coat the back of a spoon. Stir occasionally. Remove from heat and set aside. 
 
- Prepare the Chicken: - Preheat the oven to 375°F (190°C). 
- Season both sides of the chicken breasts with salt and pepper. 
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside. 
 
- Assemble the Caprese Chicken: - In the same skillet, add halved cherry tomatoes. Cook for 2-3 minutes, allowing them to soften slightly. 
- Return the cooked chicken breasts to the skillet. Top each chicken breast with a slice of fresh mozzarella cheese. 
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. 
 
- Glaze and Serve: - Remove the skillet from the oven. Drizzle the balsamic glaze over the chicken breasts. 
- Garnish with fresh basil leaves for a burst of color and added flavor. 
 
- Serve Hot: Serve the Balsamic Glazed Caprese Chicken hot, accompanied by your favorite side dishes.
