Grilled Chicken with Lemon
and Asparagus
INGREDIENTS
4 boneless, skinless chicken breasts
1 bunch asparagus, trimmed
1 lemon, thinly sliced
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
PREPARATION
Preheat your grill to medium-high heat.
In a small bowl, mix the olive oil, minced garlic, oregano, salt, and pepper.
Coat the chicken breasts with half of the olive oil mixture.
Toss the asparagus with the remaining olive oil mixture and set aside.
Place the chicken breasts on the grill, cooking for about 6-7 minutes per side, until the internal temperature reaches 165°F (74°C).
During the last 5 minutes of grilling, place the asparagus on the grill and cook until tender, turning occasionally.
In the final minute, add the lemon slices to the grill for a quick sear to bring out their sweetness.
Remove everything from the grill and let the chicken rest for 5 minutes.
Serve the grilled chicken with asparagus on the side, garnished with grilled lemon slices and fresh parsley.
