orange and almond olive oil cake

INGREDIENTS

  • 1 1/2 cups almond flour

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • Zest of 2 oranges

  • 1/2 cup fresh orange juice

  • 1/2 cup extra virgin olive oil

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • Powdered sugar for dusting

PREPARATION

  1. Preheat oven to 180°C (350°F) and grease a 9-inch round cake pan.

  2. In a large bowl, whisk together almond flour, all-purpose flour, granulated sugar, baking powder, baking soda, salt, and orange zest.

  3. In a separate bowl, whisk together fresh orange juice, olive oil, eggs, and vanilla extract.

  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top.

  6. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

  8. Dust the top of the cake with powdered sugar before serving.
