Pasta with Cheddar and Spinach

INGREDIENTS

  • 350g of pasta (of your choice)

  • 200g grated cheddar

  • 2 tablespoons olive oil

  • 2 cloves of garlic, finely chopped

  • 200g fresh spinach leaves, washed and drained

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup heavy cream

  • 1/4 cup grated parmesan

  • A pinch of grated nutmeg

  • Fresh chopped parsley, for garnish

PREPARATION

  1. Cooking the Pasta: Cook the pasta in a large pot of salted boiling water according to the package instructions. Drain and reserve a cup of pasta cooking water.

  2. Preparing the Sauce: While the pasta is cooking, heat olive oil in a large pan over medium heat. Add the chopped garlic and sauté until golden. Add the spinach leaves and cook until wilted. Season with salt and pepper. Add the grated cheddar and stir until melted.

  3. Prepare the Cheese Cream: Reduce the heat to low. Add the heavy cream and grated parmesan to the pan. Stir gently until the cream is well incorporated and the cheese is melted. Add a pinch of grated nutmeg to flavor the sauce.

  4. Mixing with the Pasta: Add the cooked pasta to the pan with the cheese and spinach sauce. Gently toss to coat the pasta with the sauce. Add a little reserved pasta cooking water if the sauce is too thick.

  5. Serve: Garnish the pasta with freshly chopped parsley and serve hot.
