Sicilian Cannoli

INGREDIENTS

  • For the Cannoli Dough:

    • 250g flour

    • 30g powdered sugar

    • 30g melted butter

    • 1 egg

    • Pinch of salt

    • 120ml dry white wine

    • Frying oil

  • For the Ricotta Filling:

    • 500g ricotta cheese

    • 150g powdered sugar

    • 1 teaspoon vanilla extract

    • Grated orange zest

    • Chocolate chips (optional)

PREPARATION

  1. In a bowl, mix the flour, sugar, and salt. Add melted butter, egg, and dry white wine. Mix until you get a smooth dough. Let the dough rest for about 30 minutes.

  2. Roll out the dough on a lightly floured surface until very thin, about 1 to 2 mm thick. Wrap the dough around metal or wooden tubes to form tubes. Make sure the edges slightly overlap to prevent them from opening during frying.

  3. Heat frying oil in a large pot to about 180°C (350°F). Fry the dough tubes until they are golden and crispy, about 2 to 3 minutes. Remove them with a slotted spoon and drain them on paper towels.

  4. In another bowl, mix the ricotta, powdered sugar, vanilla extract, and grated orange zest. Add chocolate chips if desired.

  5. Fill the crispy dough tubes with the ricotta filling using a tablespoon or a pastry bag.

  6. Dust with powdered sugar and additional orange zest for decoration.
