Sicilian Cannoli
INGREDIENTS
- For the Cannoli Dough: - 250g flour 
- 30g powdered sugar 
- 30g melted butter 
- 1 egg 
- Pinch of salt 
- 120ml dry white wine 
- Frying oil 
 
- For the Ricotta Filling: - 500g ricotta cheese 
- 150g powdered sugar 
- 1 teaspoon vanilla extract 
- Grated orange zest 
- Chocolate chips (optional) 
 
PREPARATION
- In a bowl, mix the flour, sugar, and salt. Add melted butter, egg, and dry white wine. Mix until you get a smooth dough. Let the dough rest for about 30 minutes. 
- Roll out the dough on a lightly floured surface until very thin, about 1 to 2 mm thick. Wrap the dough around metal or wooden tubes to form tubes. Make sure the edges slightly overlap to prevent them from opening during frying. 
- Heat frying oil in a large pot to about 180°C (350°F). Fry the dough tubes until they are golden and crispy, about 2 to 3 minutes. Remove them with a slotted spoon and drain them on paper towels. 
- In another bowl, mix the ricotta, powdered sugar, vanilla extract, and grated orange zest. Add chocolate chips if desired. 
- Fill the crispy dough tubes with the ricotta filling using a tablespoon or a pastry bag. 
- Dust with powdered sugar and additional orange zest for decoration.
