Spanakorizo
INGREDIENTS
- Fresh spinach 
- rice 
- onion 
- garlic 
- vegetable broth or water 
- lemon juice 
- dill (optional) 
- extra virgin olive oil 
- salt, and pepper. 
PREPARATION
- Rinse the rice under cold water until the water runs clear. 
- In a pot, sauté chopped onion and minced garlic in olive oil until softened. 
- Add the rice and stir for a couple of minutes. 
- Pour in vegetable broth or water, enough to cover the rice. 
- Bring to a boil, then reduce heat to low and cover. 
- Let it simmer for about 15 minutes or until the rice is almost cooked. 
- Stir in chopped spinach and cook until wilted. 
- Add lemon juice, salt, and pepper to taste. 
- If desired, sprinkle with chopped dill before serving.
