Spanish Gazpacho
INGREDIENTS
- 6 ripe tomatoes, chopped 
- 1 cucumber, peeled and chopped 
- 1 green bell pepper, chopped 
- 1 small red onion, chopped 
- 2 cloves garlic, minced 
- 3 cups tomato juice 
- 1/4 cup olive oil 
- 2 tablespoons red wine vinegar 
- Salt and pepper to taste 
- Fresh basil or parsley for garnish 
PREPARATION
- Combine tomatoes, cucumber, bell pepper, onion, and garlic in a blender. Blend until smooth. 
- Add tomato juice, olive oil, and red wine vinegar. Blend again until well mixed. 
- Season with salt and pepper to taste. 
- Chill in the refrigerator for at least 2 hours before serving. 
- Garnish with fresh basil or parsley.
