tiramisu cheesecake bars

INGREDIENTS

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

  • 16 ounces cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon espresso powder dissolved in 1 tablespoon hot water

  • 1/4 cup cocoa powder, for dusting

  • Whipped cream for topping (optional)

PREPARATION

  1. Preheat your oven to 180°C (350°F) and line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

  2. In a medium bowl, mix together graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until combined. Press the mixture evenly into the bottom of the prepared baking pan.

  3. In a large mixing bowl, beat cream cheese and 1/2 cup granulated sugar until smooth and creamy.

  4. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and dissolved espresso powder until fully incorporated.

  5. Pour the cheesecake batter over the graham cracker crust and spread it evenly with a spatula.

  6. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

  7. Remove from the oven and let it cool completely in the pan on a wire rack.

  8. Once cooled, refrigerate for at least 4 hours or overnight to set.

  9. When ready to serve, use the parchment paper overhang to lift the cheesecake out of the pan and transfer it to a cutting board.

  10. Cut into bars, dust with cocoa powder, and top with whipped cream if desired.
